Ingredients
- 1 pot Abinda vegetable paté
- 4 tbsps oil
- 2 tbsps nutritional yeast
- Olive oil
- 1 handful of fresh herbs (parsley, coriander, mint, basil)
- Zest of ½ lemon
- 1 cauliflower
- 300 g Abinda seitan cut into strips or cubes
- 1 punnet of brown mushrooms
- Olive oil
- Salt and pepper
- Freshly chopped chives

Oven-roast cauliflower with vegetable paté and seitan

- Cook the cauliflower whole until al dente.
- Place the cauliflower in an oven dish and preheat the oven.
- Mix the soya cream, vegetable paté, nutritional yeast and a handful of fresh herbs in a food processor and spoon the mixture over the cauliflower. Bake for 20 minutes at 175°C.
- In a pan, fry the seitan strips (or cubes) and mushrooms in olive oil, with salt and pepper, until golden brown and finish with the chopped chives.
- Serve the cauliflower, vegetable paté, fresh herbs, extra olive oil and lemon zest with the seitan strips or cubes.
