Oven-roast cauliflower with vegetable paté and seitan

  • 1 pot Abinda vegetable paté
  • 4 tbsps oil
  • 2 tbsps nutritional yeast
  • Olive oil
  • 1 handful of fresh herbs (parsley, coriander, mint, basil)
  • Zest of ½ lemon
  • 1 cauliflower
  • 300 g Abinda seitan cut into strips or cubes
  • 1 punnet of brown mushrooms
  • Olive oil
  • Salt and pepper
  • Freshly chopped chives

Oven-roast cauliflower with vegetable paté and seitan



  1. Cook the cauliflower whole until al dente.
  2. Place the cauliflower in an oven dish and preheat the oven.
  3. Mix the soya cream, vegetable paté, nutritional yeast and a handful of fresh herbs in a food processor and spoon the mixture over the cauliflower. Bake for 20 minutes at 175°C.
  4. In a pan, fry the seitan strips (or cubes) and mushrooms in olive oil, with salt and pepper, until golden brown and finish with the chopped chives.
  5. Serve the cauliflower, vegetable paté, fresh herbs, extra olive oil and lemon zest with the seitan strips or cubes.
