  • 1 kg pumpkin
  • 2 apples
  • 25 g sunflower seeds
  • Lemon
  • Salt and pepper
  • Olive oil
  • Bay leaf
  • Rosemary
  • Fennel seeds
  • Chilli flakes

Seitan tradition with pumpkin and apple


Preheat the oven to 200°C.


  1. Halve the pumpkin and remove the seeds. Cut the pumpkin into chunks. Spread over a large oven dish, drizzle with the oil and sprinkle with the herbs. Place in the oven for 30 minutes.
  2. After 30 minutes add the pumpkin seeds for 10 minutes (to roast them off). Slice the unpeeled apple and drizzle with lemon.
  3. Divide the roast pumpkin among the plates and add the fried seitan strips. Drizzle with oil and serve.
